Source: emmrazz1 1/4 Cups All Purpose Flour
1 Cup Shredded Carrots
1/2 Cup Brown Sugar
1/2 Cup Melted “Butter” (you can use oil too, just maybe a little less)
2/3 Cup Coconut Milk
1 Teaspoon Vanilla
2 Tablespoons Cornstarch
1 Teaspoon Baking Soda
2 Teaspoons Baking Powder
1/4 Teaspoon Salt
1/4 Teaspoon Cloves
1/8 Teaspoon Ginger
1/4 Teaspoon Cinnamon
1/4 Cup Coarsely Chopped Raisins
1/2 Cup Chopped Nuts (i used pecans and walnuts)preheat oven to 350 degrees f. combine dry ingredients with a sifter to aerate the flour and make sure there’s no clumps of baking soda. add the nuts and the raisins, stir. add carrots, “butter”, vanilla and coconut milk. stir with a spatula until just combined and pour into either two greased circle cake pans or one larger rectangle pan. bake for 30-40 minutes.
